Don’t be scared away by the watermelon! After you bake and marinade the watermelon it has a very similar texture to tuna! The nori sheets give it a ‘fishy’ taste, the bowl can be topped with your favourite poke bowl toppings!

Watermelon Poke
Make your own plant-based poke out of watermelon, and enjoy it in a classic poke bowl with sriracha mayo.
Ingredients
- For Poke:
- ½ small watermelon
- 1 tsp miso paste
- 1 tsp hot water
- ¼ tsp ground ginger
- 1 tsp sesame oil
- 1 tsp soy sauce
- 1 tsp rice vinegar
- ½ a nori sheet
- 1 tsp sesame seeds
- For Bowl:
- Cooked rice (sushi rice, brown rice or short-grain black rice)
- Cucumber
- Edamame
- Mango
- Cabbage
- Shredded carrots
- Sesame oil + Rice vinegar
- Sriracha mayo (1 tbsp vegan mayo + 1 tsp sriracha - adjust to spice preference)
Instructions
- Preheat Oven to 400 F. Chop your watermelon into cubes and bake for 35 minutes. The juices will evaporate out and it will appear rubbery.
- Mix your marinade and add your watermelon. Let it sit in the fridge while you prepare the rest of the ingredients, or overnight is even better!
- Dress your rice and cabbage with a drizzle of sesame oil and rice vinegar.
- Top with edamame, mango, cucumber, carrots and poke. Drizzle with sriracha mayo and sesame seeds - enjoy!
