Chai Fig Granola

Flavourful and crunchy chai spiced granola with dried figs.
  • 2 Cups oats
  • ½ Cup slivered almonds (or just chop regular ones)
  • ½ Cup walnuts
  • ½ Cup shredded coconut
  • ½ Cup buckwheat groats (optional)
  • 1 tsp Cinnamon
  • ½ tsp each: ginger, cardamom. ground cloves
  • ¼ Cup almond butter
  • 2 Tbsp coconut oil
  • 2 Tbsp Maple Syrup
  • ½ Cup dried figs
  1. Preheat of to 350 degrees.
  2. In a large bowl mix the dry ingredients (oats, nuts, coconut, buckwheat and spices). Ensure all the spices are evenly distributed throughout the mixture.
  3. Melt the wet ingredients together on a stove top or microwave, coconut oil should be completely melted. Mix into the dry ingredients until the granola is completely covered and forming clumps.
  4. Pour onto a baking sheet and bake for 25-30 minutes. It is a good idea to stir it half way through to ensure the granola cooks evenly and forms 'clumps'.
  5. Once cooled (or partially cooled if you can't wait) mix in the dried figs. Serve!
*If avoiding oil or do not want to use coconut oil bake on a parchment lined baking sheet. Note your granola will be dryer and not form as many clumps.
