Pumpkin Spice Granola

Pumpkin spice for breakfast, lunch and dinner!
  • 3 Cups Rolled Oats
  • 1 Cup Puffed Quinoa or Rice (or 1 extra cup of oats)
  • 2-3 cups chopped nuts or seeds (Almonds, Pumpkin Seeds, Walnuts or Pecans)
  • 1.5 tsp Cinnamon
  • ½ tsp each, ginger + nutmeg
  • ¼ tsp cloves
  • ½ Cup Pumpkin Puree
  • ¼ Cup Maple Syrup
  • ¼ Cup Coconut Oil
  1. Preheat oven to 350 F.
  2. In a large mixing bowl, mix all of the dry ingredients including spices.
  3. In a small pot or microwave melt pumpkin puree, maple syrup and coconut oil. Pour the wet mixture over the dry mixture and mix thoroughly.
  4. Pour onto a baking sheet. You should see visible clumps.
  5. Bake for approximately 30 minutes stirring half-way through.
  6. Serve with plant milk, plant yoghurt, on smoothie bowls or chia pudding!
